So I'm kinda worried that the show is not going to include Robb's letter declaring Jon Snow to be his heir. In the books they write up the letter on the way to the Twins. It hasn't amounted to much yet (in the books), and if they decide to not even mention it in the show then I assume it won't play a role later in the books which kinda sucks. They only got half an episode left to address it.

There is definitely more to the next episode than the wedding, so I think they'll have time. If they don't include it, then that seems to be an indication that it's probably not all that important in the grand scheme of things in the novels, which in and of itself would be interesting. Maybe it was just a red herring in the books?

Never understood the relevance of it regardless. Actually kind of seemed like sloppy writing because Stannis offers lordship of Winterfell to him anyway. And even if he didn't, I don't think a dead guy's will makes any difference in Westeros.

Lordship of the North is different than King of the North. If Robb's former bannermen find out that, in Robb's will, he made Jon Snow his legitimate heir, they will likely rally to Jon's side. None of them love the Boltons, and are mostly just allied with him because they don't really have a better option and most of them have no reason to love Stannis or anyone bending the knee to him. If and when Robb's will does surface, that would give them the better option. My current guess, since we all know that Stannis isn't really Azor Ahai reborn, is that Stannis will fall in battle in the North and that the reborn Jon, as the new Lord of Light's chosen one, will take his armies and unite them with the lords of the North.
That, to me, would be the relevance of that whole subplot.
