Their steak knives look pretty cheap on Amazon. Was honestly expecting to pay more. Def not a bad thing.

Finest in German craftsmanship.

Edit: Make sure to buy the mid-level set or better. Make sure they are made either in Germany, the EU or Japan.

The cheaper ones are not as well crafted and are made in China.

Yes.. don't fuck with it...

Season simply with just salt, pepper and smoked paprika.

Using a solid pan (cast iron, carbon steel, or thick stainless steel), saute in a 50/50 mix of olive oil and butter with one clove of garlic roughly chopped, and a sprig of rosemary. Cook on medium-high heat while tilting the pan at an angle and spooning the foaming butter over the top of the fish until the skin is crisp and the flesh is white near the bottom, then flip, sear until the edges are just white. Gently tilt the fish onto it's edges and sear on it's sides for about 30 seconds a piece. Should be just slightly pink in the middle.

You can make sauces to go with it, but, not sure how much you're trying to get into it.

I think I'm going make salmon tonight now. On sale at Acme for 5.99/lb!

Need to think of a prep my wife would like though. Which usually means just chili/ginger/garlic/soy/sesame/rice vinegar/green onion. I swear I should just pre-mix this concoction and bottle it in the fridge.

That or my wife just got some curry powder from her mother that smells amazing...eh I'll probably save that for chicken since I've never cooked with it before.

Also since people were talking about knives I thought I would share my newfound love for Kiwi knives. My wife has been getting into cooking more so I bought her a few of "her own" knives for Christmas. Found great reviews about Kiwi knives, super cheap and super sharp.

Now I don't use my knives and use the Kiwis (my knives aren't great anyways, honestly I bought them because the block has a small footprint and my kitchen has no counter space...should have just bought good individual knives).

Find them at an Asian grocery for probably a few bucks a pop...I bought them from wokshop.com but I was at Park to Shop recently and saw they had them (price unmarked).
 
Made ancho chicken enchiladas the other night. They were fucking delicious. Made my own sauce and everything. Surprisingly easy and gave me a couple days' worth of food.

The cheese I used was Queso Chihuahua, which for my money is the best Mexican cheese I've been able to find around here. It melts so perfectly and tastes great. It's also perfect for making quesadillas.

Anyway, if you're in the mood for Mexican food, I'd highly recommend the recipe above. Just make sure you buy some quality cheese. It made a big difference.

Never buy the farmed salmon.

The easiest way to cook it is throw some olive oil on, salt, pepper, rosemary sprigs, lemon juice wrap it in foil and throw it on the grill or in the oven for ten minutes.

Quick, tasty, little clean-up.
