FYI the dollar tree has a large bottle of Salt - Pepper - Garlic seasoning that isn't half bad. Saves a step and some money for your bbq.
 
Along those kind of lines, I made some chicken soup yesterday...

"Poultry seasoning" is fantastic if you just want some vague notes of dried herbs but no particularly strong herb flavors that standout. Like if you use rosemary it can be overpowering, but poultry seasoning is basically "non-descript hint of dried herb flavor" so I end up using it on anything that I think needs some "non-descript hint of dried herb flavor."
 
The greatest one bite app for games:

Step one: Make carnitas in a slow cooker starting the previous night. Shred before serving and spread it in a thin layer on a baking sheet under the broiler for five minutes to get the pork crispy.

Step two: Make guacamole, or of course buy store bought.

Step three: Lay down Tostitos Scoops, then a teaspoon of guac, then top with crispy pork and cilantro leaf.

I make an al pastor variant of this, but love how you mentioned the broiler, it really kicks it up. I've tried a really hot BBQ grill as I tried not shredding it up... That didn't work out as planned, but I've only tried once and it seems like it could work.

And sorry if I am saying something everyone already knows. If you want kick ass tortilla chips and salsa/guacamole/anything.

Warm them in the oven.

I was spoiled by incredible Al Pastor in the S.F. Mission District. There's a place that makes it on a gyro meat spit, roasting slowly all day. Ruined Al Pastor for me. Can't have it anywhere else.

My carnitas recipe has become idiot proof.

I sprinkle a healthy amount of onion and garlic powder on the pork butt with kosher salt and let it sit for a half hour. Then I sear in the Instapot. I buy a brand of marinade called California Olive Branch Chile Lime Verde, dump it in the slow cooker with some extra fresh garlic. I set the Instapot for 20 hours before bed, that's it.

Once I put the pork under the broiler, I sprinkle some cumin on top to give it more taco flavor. That bark on the pork is just addictive.
 
I have a pulled pork tostada recipe with guacamole, very similar to Keys. Will be grilling this weekend as I go through a ten day period of her birthday, Mother’s Day and anniversary with a graduation three days after that.

As if picking the wedding date was my call.

Weber is the best. I can’t use a smoker on my property. I keep getting Weber cookbooks - now up to five. It’s interesting to see the change in grilling styles over the past 40 years.

As a kid though everyone had a cheap ass round grill and we used charcoal and lighter fluid. Nothing adds flavor to grilled food like lighter fluid. There would always be news stories about assholes who ran out of lighter fluid and substituted gasoline. I think that’s where the phrase “flaming asshole” came from. Either that or lighting farts.
