The point is, Ty; if you'd say, yes, that man is gay, you can't stand on the opinion that the trans person isn't a male because the sex organs they have at birth. That contradicts that opinion, because the Trans Male likely still has his sex organs from birth.

If a man is only attracted to men and ftm trans, yes, he's gay.
If a man is attracted to females, and ftm trans, he's bi.

I mean, from the perspective of the cis male having sex with a trans asking this question of himself, only he can know, right? IMO, if it's a legit post op trans who fully identifies as female and isn't just trying things on/operating with one foot planted in each world, than the cis dude having sex with the post op trans isn't gay, unless he himself think he is, knows he is, or wants to consider himself such.

But that's just my uninformed and unexperienced opinion and I haven't read a single other page in this thread but this one to get the overall feel and shape of the conversation taking place.
