Weighed myself at 209 (!!) a couple weeks ago. Haven't been over 200 since I lost a ton of weight my sophomore year in college.
Since then, I've been on a pretty mean cut - coming in under 1500 calories (and sometimes even less) every day. Been eating a ton of grilled chicken breast out of the deli for dinner. Predictably, I'm getting a little sick of it but love the nutritional value it brings.
What do you guys do with chicken breast to change up tastes and styles? I've been seasoning it/marinating it differently before grilling it, but what other options are out there?
Dry rubs. It will add flavor, but not as many calories as a sauce would. Well worth the "cheat", it will keep you on track for much longer.
Exactly what bigfoot said, when I want to put a sauce on the chicken, I cook in the crockpot. One of my go-to's is SBR BBQ, lime, lemon zest, hot sauce, wors. sauce, honey, seasonings, brown sugar. Or just the classic salsa, taco seasoning, hot sauce. Shred it up and can put it over brown rice/quinoa, in taco's, by itself.
But when I bake/grill, I basically
always go dry rub. It's a great way to keep your mouth entertained and you can REALLY get a myriad of flavors in your mouth. Love pepper, cayenne, chili powder, garlic powder, McCormick spicy chipotle, dry mustard, red pepper flakes. Seems like a lot but holy shit the flavor is awesome.
I think this Sunday I am going to go with a "stir-fry" recipe. tons of broccoli, mushrooms, tri-color peppers, pineapple, quinoa, chickpeas, edamame, celery, sliced carrots, chicken. Cook the chicken in a low-sodium sauce in the crock pot, or if I want to get super healthy, a dry rub. If I go crockpot, about 30-45min before chicken is completely done, add all veggies in crock pot. Otherwise, pan fry them.
