Robert's Rebellion is definitely the most likely, I think, as it would involve a lot of characters we already know, albeit with different actors portraying them.
There's a lot of great content, though. As Chris said, Dunk and Egg would be awesome as well, and there's already a little source material for that.
The only issue with going in the direction of Robert's Rebellion is that the aftermath/result already has been shown, including the birth of Jon Snow. We know Stannis gets in a siege, that he holds out, that Aerys has the Starks burned alive in their armor...and it's not just in a book, but actually on a show already where that has been disclosed.
I'd really prefer for them to do something where the show/book historical record is vague enough that we can be surprised by much of what happens.

Well, we knew what was going to happen in each of the first five seasons of Game of Thrones, but it didn't necessarily hurt the enjoyment. I guess season five kind of hurt at times, but that wasn't the book's fault.

I think it is different where a show is "spoiled" by another show rather than by a book.
