Everything else is just more complicated ways to attempt this level of epic flavor.
 
Seriously, though, I gotta say I love me some Himalayan food. Indian, Pakistani, Nepalese, etc. The spicier the better.

I can't pick a favorite. One of the best meals I ever had was some authentic Korean in Tacoma, WA. My buddy there grew up in S. Korea and really hooked it up.

Thai food gets some very high marks, as well.

Really, anything very spicy is on my list. Due to 24/7 allergy induced nasal swelling, I usually can't smell things very well. So, to me, more spicy heat = more flavor.
 
Favorite food: Anything fried repeatedly

Culture: Hillybilly
 
Filipino stuff, almost all the great dishes are stew/broth based.

Sinigang (sour stock of pork cutlets, best eaten with spicy fish sauce)

Bulalo (Beef + marrow + bones, best eaten with spicy soy sauce)

Kare-kare (peanut based broth + pork/beef, best eaten with spicy fish paste)

Lechon (whole pig, slowly roasted = cardiac delight)

Acquired tastes for most? Maybe. But I love 'em!
